Coffee Cake Challah

Happy almost weekend!

One of my favorite cakes is coffee cake, and strangely I really like the Pesach Manischewitz coffee cake mix {I can eat almost an entire cake in a sitting.} 

So, while being challah deprived on Pesach, eating straight out of the coffee cake tin I had this idea! It’s sort of a mashup between a cinnamon bun {since I fill the strands with the streusel} and coffee cake! Yumm!!
What you will need
Swap sugar for-
1 tbsp sugar
⅓ cup honey or maple syrup
Use 2 eggs instead of 1
Add in-
1 tbsp vanilla
2 tsp salt 1 tbsp cinnamon
½ tsp nutmeg
Additionally, can sub water for milk or almond milk for a richer dough
Streusel Filling:
5 tbsp oil
1 tbsp cinnamon
¼ tsp nutmeg
¼ cup brown sugar
⅓ cup flour

Streusel Topping:
Separate half off the filling from above and add ⅓-½ cup flour for a drier streusel crumb

Directions:
Make challah dough according to directions here, add in vanilla with the eggs, then add in the cinnamon and nutmeg along with the flour. 
Divide dough into 8 equal parts and then roll each part into a log, long enough to fit a loaf pan. {makes 2 loaf challah}

Make the streusel filling in a bowl by adding all ingredients and stirring until combined.
Separate half of the streusel filling into a separate bowl, and add flour gradually until it turns into a drier streusel crumb.
Gently flatten each log so that it is about 2 inches wide. Add a shmear of the streusel filling to each flattened log. Pinch the edges to seal, and then braid the logs. Place the challah in a greased loaf pan and let the challah rise 30 minutes.
Preheat the oven to 350°F. 
Brush with an egg wash and top with the streusel topping.
Bake for 40 minutes, turning the tray halfway through so it bakes evenly.

Alfredo Sauce

Alfredo is the ultimate comfort meal, especially in the winter! This recipe is so easy to make and can be used multiple ways throughout the week for easy meals!
Alfredo Sauce ~ The Dreams Weaver
What you will need: 
1 stick butter
1 cup heavy cream
Salt and pepper
2 cups freshly grated Parmesan
Pasta cooking water, as needed 

Directions:
In a saucepan or skillet, warm the butter and cream. (This week I did not have heavy cream in the fridge, so substituted for whole milk and 1 tbsp flour and worked out perfectly!)

Season with salt and pepper. Add the Parmesan and stir until melted. 

Toss to combine, thinning with pasta water if necessary.

This sauce can be used for fettuccine Alfredo, or farfalle pasta and peas! I tossed frozen peas into the pasta with sauce and just heated through for a few minutes.

I also used this sauce as a base for a white mushroom pizza. Either make pizza dough recipe here (or store bought) roll out, schmear a generous amount of Alfredo sauce, sprinkle with mozzarella cheese and sautéed mushrooms!

Cranberry Pumpkin Loaf

I love everything pumpkin and any excuse to use pumpkin! And my new favorite combination is pumpkin and cranberry. The earthy, deep flavor of pumpkin combined with the fresh, tart pop of the cranberries in this pumpkin loaf is so unexpected. Festive enough for New Years dessert!

What you will need:
½ cup canola oil (or 1 stick unsalted butter)
1 cup pumpkin puree (recipe for homemade here)
1 cup loosely packed light brown sugar
¼ cup maple syrup
1 tsp vanilla bean paste (or extract)
2 large eggs
1 cup whole wheat flour
1 cup all-purpose flour
2 tsp baking powder
1 ½ tsp pumpkin pie spice
¾ tsp kosher salt
½ tsp baking soda
½ cup frozen cranberries
2 tbsp turbinado sugar

Directions
Preheat the oven to 350°F. Line a loaf pan with parchment paper and grease, or grease a loaf pan and dust with flour.

Combine the oil, pumpkin, brown sugar, maple syrup, vanilla and eggs in a large bowl. Whisk until smooth.

Whisk together the all-purpose flour, whole wheat flour, baking powder, pumpkin pie spice, salt and baking soda in a separate bowl. When I don’t have whole wheat flour on hand, I use all-purpose flour and it works well too.

Add the dry to the wet ingredients and whisk until smooth (but don't overmix).

Scrape into the loaf pan and smooth the top with a rubber spatula. Press cranberries into the top and sprinkle with turbinado sugar.

Bake for 50-55 minutes, until the top is browned and crusty, and a toothpick inserted in comes out clean. Let cool.

Creme Brûlée

My husband’s favorite dessert (and one of mine) is creme brûlée. We had a really good creme brûlée a few weeks ago while away in Antigua, and I wanted to recreate it. While I had always been intimidated to try to make it, I took the plunge the other week! And it passed his taste test! Success!

What you will need
1 pint heavy cream 
1 tbsp vanilla bean paste 
3 large egg yolks 
¼ cup granulated sugar 
⅛ cup turbinado sugar

Directions
Preheat the oven to 325°F.

In a saucepan, add the heavy cream and vanilla bean paste. Bring to a light simmer for 5 minutes. Take off the heat and cool to room temperature for 30 minutes.

In a bowl, whisk together the egg yolks and granulated sugar until combined and lighter in color.

Slowly add the cooled cream mixture, whisking constantly.

Place 6 glass jars or ramekins in a large pan. Pour the mixture into the jars. Place the pan in the oven, then pour hot water into the bottom of the pan, enough so the water comes about halfway up the sides of the jars.

Bake until set and just a little bit jiggly, 35 to 40 minutes. Remove the jars from the oven and let cool on the counter until they reach room temperature, then place the jars in the fridge for 2 hours to chill.

Evenly sprinkle the top of each jar with the turbinado sugar. Using a kitchen torch, or under the broiler, melt the sugar until it bubbles and turns dark golden brown. This will form a crunchy top. Let sit for a few minutes.

{Healthy} Spinach Banana Donuts

These cute healthy donuts are the perfect toddler-approved two bite snack. There are only 6 ingredients!

These green donuts are packed with nutrients, and if your toddler is like mine and does not like most veggies these help fill in that area.

These donuts are so easy to make and are versatile. You can make them in mini donut pans like I did, or even muffins. They freeze well {in an airtight bag or container} for months and you can pop them out as needed.

What you will need: 
1 ½ packed cups baby spinach 
1 banana 
2 large eggs 
3 tbsp rolled oats 
½ tsp cinnamon 
1 tbsp ground flaxseed 
Glaze- 
6 tbsp powdered sugar 
 2-3 tsp water 

Directions: 
Preheat the oven to 350°. Grease your donut pan.

Add all of the ingredients into a blender and process until smooth.
Pour the batter into the donut cavities and bake for 17 minutes or until the donuts are firm and browning on the edges. 

Pop out of the donut cavities and let cool completely before adding the optional glaze or freezing. 

Glaze- 
Combine the powdered sugar and 2 tsp water in a bowl until it’s a thick consistency. If too thick, add another tsp water. 

Glaze your donuts by either turning over and dunking into the glaze, or drizzle over the top with a spoon. 

Decorate with some sprinkles!

Cherry Crumble Challah

This challah is stuffed with homemade fruit preserves that are both sweet and tart. I used stone fruit in my preserves, which I think are quintessential summer fruits! The preserves swirl through the center of the challah and are topped with a crunchy oat crumble.

What you will need:
Challah dough {recipe here}
Filling
Homemade fruit preserves {recipe here} or store bought works as well
Topping
½ cup brown sugar
½ cup old fashioned oats
½ cup all purpose flour
½ tsp cinnamon
¼ cup canola oil or margarine/butter

Directions
Prepare challah dough according to directions. 

Preheat the oven to 350°F. 

Divide dough into 4 equal parts and then roll each part into a log, long enough to fit a loaf pan.

Gently flatten each log so that it is about 2 inches wide. Spoon about 1 tbsp preserves down the center of each log. Pinch the edges to seal, and then braid the logs.

Place the challah in a greased loaf pan and let the challah rise covered with a towel 30 minutes.

While the challah is rising, prepare the crumble topping. Combine all dry topping ingredients in a bowl. Use a pastry cutter or 2 forks to mash cold margarine/butter into the oats mixture until the mixture resembles coarse crumbs. If using oil, just stir in.

Once the challah has risen, spread the crumble topping over the challah. Pat the topping gently until even.

Bake for 40-50 minutes, until the top is golden brown and the challah is cooked through.

Chocolate Macaroon Challah

I love chocolate covered macaroons, and not just for Pesach. This week I tried to recreate the flavors to stuff inside my challah, and top with a chocolate drizzle!

What you will need
Challah dough {recipe here} Filling
¾ cup unsweetened shredded coconut
1 tsp vanilla extract
¼ cup sugar
1 egg white
Topping
Unsweetened flaked coconut
1 egg
Chocolate drizzle
¼ cup chocolate chips
½ tsp canola oil

Directions:
Prepare challah dough according to directions.

Prepare the macaroon filling - separate an egg, and whisk the egg white and sugar until stiff peaks form. Gently fold in the shredded coconut and vanilla extract. Set aside.

Preheat the oven to 350°F.

Divide dough into 4 equal parts and then roll each part into a log, long enough to fit a loaf pan.

Gently flatten each log so that it is about 2-3 inches wide. Fill with the macaroon mixture. Pinch the edges to seal each log.

Braid the challah. Place the challah in a greased loaf pan and let the challah rise for 30 minutes.

Once the challah has risen, brush with an egg wash. Sprinkle with shredded coconut.

Bake for 35-40 minutes, until the top is golden brown and the challah is cooked through.

Once the challah is out of the oven and cooling, prepare the chocolate drizzle. Melt the chocolate chips in a microwave safe bowl in the microwave in 30 second increments so as to not burn the chocolate. Once melted, add the oil and stir to combine.

Drizzle the chocolate glaze over the top of the challah.

Potato Knish Challah

What do you get when you stuff mashed potatoes and mushroom inside of your challah strands? Potato knish challah! And that’s exactly what my house smells like as this challah is cooking. 

This challah is oh so savory, and so good served warm! One of my favorite savory mashup creations yet!
Potato Knish Challah ~ The Dreams Weaver
What you will need:
Challah dough {recipe here}
Filling
3 Maine or Yukon gold potatoes
2-3 garlic cloves
Salt 
1 container mushrooms
Topping
1 egg
Mushrooms
Fried onions {I use Trader Joe’s fried onion pieces}

Directions
Prepare challah dough according to directions. 

Preheat the oven to 300°F. 

On parchment lined sheet tray or greased aluminum foil, spread out the mushroom slices and bake for about an hour. This helps remove all the excess moisture in the mushrooms that could make the challah soggy! {or use Trader Joe’s Crunchy Champignon Mushroom Snack to save a step, but we just finished our last bag on a pizza!}

While the mushrooms are in the oven, start on the mashed potatoes. I peel and cube my potatoes so they boil faster. I place it all in the pot with a generous amount of salt and garlic cloves. Boil for about 15-20 minutes or until fork tender. 

Drain the potatoes, but save the starchy water! This helps the mashed potatoes become creamy without having my to add margarine. 

Use a potato masher to mash the potatoes and gradually add the starchy water until creamy, but not too liquidy. Add salt and any other seasonings.

Allow the mashed potatoes cool, if the filling is too hot it will be hard to shaped the challah. I usually do mine a day in advance. 

Preheat the oven to 350°F.

Divide dough into 4 equal parts and then roll each part into a log, long enough to fit a loaf pan.

Gently flatten each log so that it is about 2 inches wide. Place cooled mashed potatoes along the log, and top with some dehydrated mushrooms. Pinch closed and braid.

Place the challah in a greased loaf pan and let the challah rise 30 minutes.

Once the challah has risen, brush with an egg wash, and sprinkle with reserved mushrooms and fried crispy onions.

Bake for 35-40 minutes, until the top is golden brown and the challah is cooked through.
